Serves 1-2 3 eggs Salt and pepper to taste 15g/half an oz butter 2oz Grated cheese
1. Beat the eggs and seasoning with a fork until lightly mixed, then add the cheese. 2. Slowly heat a heavy frying pan. 3. Add the butter and, as soon as it has melted, pour in the eggs. 4. Using the fork keep drawing some of the mixture to the middle from the sides of the pan so the uncooked egg may set. 5. Cook for 1½ to 2 minutes or until the omelette is soft but not runny. Remove the pan from the heat and fold the omelette in half.
